Trust me, the myth that the fans do nothing at speed is a myth.  You need good operating fans.

Midlife Crisis on Wheels!

Fans help but the car needs to run cool at 70mph at any ambient without any fans.  Like this:

Ambient temperature Houston (75-85 currently), engine temperature in stop and go traffic it ranges from 195-208(i think the fans kick in at 208). When cruising at 70 when traffic let's off the temperature goes down to around 185-190.

This is the way it should work.  Yes, fans are important but there is something else wrong too.  As cDc_Geo points out, the fans aren't on at 190* so the fact that his car cruises at 185-190, means the fans aren't aren't helping.  Of course, a good shroud is needed on fans so they don't hurt airflow (much) when the fans aren't on.  We need to figure out the root problem with your cooling system.

Would it be possible that I also need a new thermostat? maybe one that opens up around 160F-170F?

Doesn't help

We go through this all the time.

A lower temp thermostat only delays the car coming up to temp by opening earlier.  This car doesn't have enough cooling capacity to have the thermostat control the operating temp of the engine.  Putting in a lower temp thermostat will not lower the temp that the car runs at.

Post a photo with a part number when they arrive so we can confirm they are the correct ones before you install.  In the meantime, check out the link to Joeereid's ducting project for a unmodified body MSM.

No need for a part number.  If they have the 4 wire plugs then they are Mazdaspeed fans since the non-Mazdaspeed fans are single speed and only have 2 wires.

so the fans came in, I was able to install them, it took me a while, but I emptied out the radiator flushed it out and poured distilled water with a bottle of redline water wetter, and a some antifreeze. I installed the oem fans and put everything back together. Went for a drive to make sure both fans were running, got back home opened the hood and I smell something burning, upon inspecting it I see smoke and the burned smell coming from the driver side motor of the fan  shockeyes I don't know what to do now, I don't even know how that happened. I went to go disconnect it and the plug is fried, so Im pretty sure I blew a fuse as well. I did not connect the plug wrong, it fit in nice and snug when I connected. The passenger side fan was working and spinning properly. What is my next step now.....  Cry  Sad help buck2

Sounds like a fan issue.  I'd contact the vendor
